- We have been brewing sake for about 340 years in Minamiaizu, in the southwestern part of Fukushima Prefecture. Minami Aizu is an area where one can clearly feel the four seasons: melting snow in spring, fresh greenery in summer, autumn leaves in fall, and heavy snowfalls that can reach -20°C in midwinter. The brewery uses very soft, ultra-soft water pumped up from 60 meters below the ground on the brewery's premises to produce soft, clean, and easy-to-drink sake. Minamiaizu is a major production area of Fukushima Prefecture's "Yumeko" rice suitable for sake brewing. We use mainly Yumeko, which is one of the best quality rice, to brew sake that makes the most of the local climate. We will continue to work hard so that when you drink our sake, you can feel a little bit of Minamiaizu.
