Aizu Shuzo was founded in 1688. For over 300 years since then, we have been brewing sake in Minamiaizu, Fukushima Prefecture. Surrounded by mountains and blessed with vivid seasonal changes, Minamiaizu is a region of heavy snowfall where summers are hot and winters drop to nearly -20°C. It is this harsh yet bountiful natural environment that forms the foundation of Aizu Shuzo’s sake brewing. We use ultra-soft well water drawn directly from the brewery grounds for our brewing process. This water creates a soft, rounded character in the sake, while the extremely cold winter conditions inside the brewery foster a clear, pure flavor with minimal off-notes. Under the theme of “Brewing the Spirit of Minamiaizu,” Aizu Shuzo has pursued a brewing philosophy that harnesses the unique water, climate, rice, and human expertise found only in this region. While preserving tradition, we refine our craft with a modern sensibility to deliver sake that harmonizes the region’s distinct character with contemporary sensibilities—resulting in a soft, clean, and easy-to-drink sake.
