Pukupuku Brewing, crafting sake in Odaka, Minamisoma City, Fukushima Prefecture. We transform rice from Fukushima's coastal regions into sake through bubbling fermentation. We founded the brewery in July 2022 with the mission: "To increase farmland along Fukushima's coast through sake." As a Phantom Brewery, we traveled across Japan learning brewing techniques at breweries nationwide. In autumn 2024, we finally established our own brewery and standing bar in Odaka, Minamisoma City. Our concept is "sake that dissolves cultural boundaries." We naturally ferment rice from the Hamadori region to produce doburoku and craft sake. Our brewing technique is characterized by using only natural fermentation (no added yeast), just as it was done in the Edo period and earlier. We also incorporate craft beer techniques and brew in wooden barrels. Enjoy a truly unique taste.
