- In February 2021, we established a brewery in the town of Odaka, Fukushima Prefecture, where the population had temporarily dropped to zero due to the nuclear accident. Since July 2023, we have also been operating a brewery in the neighboring town of Namie. Guided by the philosophy of “making sake with greater freedom,” we create sake that transcends traditional genre boundaries. For haccoba’s signature sake, we add hops—an ingredient typically used in beer—during the sake fermentation process. While this may seem like a novel approach at first glance, it is actually based on “Hanamoto,” a traditional doburoku brewing method passed down in certain regions of Tohoku. Using this as a starting point, we are challenging ourselves to create a diverse range of flavors by incorporating modern craft beer brewing styles and other techniques. Let’s embark on a culinary adventure together with this new-era sake, reimagined through the lens of the region’s former free-spirited doburoku culture!
