- Phoenix Beautiful Fields, a sake brewery that has walked alongside the history of Nikko. The brewery stands in Mitamura, a land of abundant rice fields stretching as far as the eye can see, and numerous wells dotting the landscape, from which plentiful groundwater is drawn with a roaring sound. We cherish the mission and passion to convey the blessed terroir of Mitamura through our sake. We brew sake characterized by a bright, smooth texture, an early attack revealing the rice's sweetness, a peak flavor profile, and an aroma dominated by muscat-based ginjo notes. Guided by the principle that "harmony brews fine sake," we craft "Hōō Biden"—a sake where the unique tones played by each brewer, like an orchestra, unite into perfect harmony. [2026~] The name "Hōō Biden" originates from Mitamura Village, Shimotsuga District, Tochigi Prefecture. Situated in the heart of the northern Kanto Plain, "Phoenix Beautiful Fields" is blessed with endless rice paddies and abundant, pristine groundwater gushing from numerous wells scattered throughout the land. We are fully committed to a grand project: cultivating rice fields, growing sake rice, and brewing sake in collaboration with every farmer in the Mita district where our brewery stands!

The beef we handle comes from calves brought all the way from Miyazaki in Kyushu to the farm operated by the proprietor here in Fukiage, Shimotsuke. We raise them with care for over two years, nurturing them into mature cattle weighing over 600 kilograms before delivering them to you. The proprietor, upholding a family tradition spanning two generations, operates under the motto of serving customers through integrated operations from production to sales, conducting business nationwide.
