The brewery is located in a rural area famous for its rice production, with excellent water and air quality. The sake brewed using subsoil water from the Otani River, which originates from Mt. The yeast used is one that is developed by the Industrial Technology Center of the prefecture every year, and is suited to the brewery's needs. In addition, our toji is from Kashiwazaki City, Niigata Prefecture, and has been our toji for over 20 years. In addition, as a recent trend, we are attempting to have four young local people engaged in sake brewing to carry on the traditional skills of the brewery.
