- Senkin "Senkiku" is a sake brewery founded in 1806 (Bunka 3) located in Sakura City, Tochigi Prefecture. Sakura City lies northeast of Utsunomiya City in Tochigi Prefecture. It features a tranquil rural landscape consisting of plains and rolling hills, blessed with abundant nature including the flowing Kinugawa River and famous cherry blossom viewing spots. "Senkin" means "crane dwelling in the realm of immortals," and this crane is depicted on the label as the brewery's symbol. Guided by the motto "Old yet New Craftsmanship," the brewery champions sake production in harmony with nature. It uses locally grown, naturally cultivated rice—free from pesticides and chemical fertilizers—and draws its brewing water from the same underground aquifer as the rice fields. This approach expresses the land's terroir in every bottle. In 2024, embracing the concept of "Edo Return," the brewery underwent its first rebranding in 20 years. This involved a deeper exploration and pursuit of more traditional Edo-period brewing methods, expanding its use of 100% kimoto-style brewing and yeast-free (natural yeast) fermentation, and transitioning to 100% organically grown rice. This represents an antithesis to the drastically changed, convenient agriculture and sake brewing of today, emphasizing coexistence with terroir and the local community. We also collaborate with local farmers to engage in environmental conservation. Senkiku will pioneer the future as a brewery uniquely fusing tradition and innovation. "Neither new nor old, but cherish what is good. This means aiming for an 'Organic Town'. ◇Through sake brewing, we will promote the health and safety of what children consume. This means supplying organically grown rice and vegetables to school lunches. ◇We will transition to wooden barrels for brewing and wooden tools for fermentation. This means reducing iron and plastic, valuing materials that return to nature. While the efforts of a single company may seem inadequate, we believe protecting and nurturing primary industries (agriculture and forestry) is the beginning of a "return to Edo." Our brand concept is "Old yet New Craftsmanship." Our policy is to cultivate all rice used as raw material in fields situated along the same water vein as our brewing water (groundwater), making it a "domaine." Our key concepts are Nature × Tradition.
