Senkin Brewery, founded in 1806 (Bunka 3), is located in Sakura City, Tochigi Prefecture. Sakura City lies northeast of Utsunomiya City in Tochigi Prefecture. It features tranquil rural landscapes, consisting of plains and rolling hills. The Kinugawa River flows through the area, which is rich in greenery and blessed with abundant nature, including famous cherry blossom viewing spots. Guided by the motto "Old yet New Craftsmanship," the brewery champions sake production in harmony with nature. It uses locally grown, naturally cultivated rice—free from pesticides and chemical fertilizers—and draws brewing water from the same underground aquifer as the rice fields. This approach expresses the land's terroir in every bottle. In 2024, we rebranded for the first time in 20 years under the concept of "Edo Return." This involves a deeper exploration and pursuit of more traditional Edo-period brewing methods, expanding our use of 100% kimoto-style brewing and yeast-free (natural yeast) fermentation, and progressing toward a complete shift to organically cultivated rice. As an antithesis to the drastically changed modern convenient agriculture and sake brewing, we value coexistence with terroir and the region, collaborating with local farmers and engaging in environmental conservation. Senkin will forge the future as a unique sake brewery that fuses tradition and innovation. "Neither new nor old, but let us cherish what is good. And let us brew sake together with nature." ◇ We brew sake together with nature (terroir). ◇ We are transforming the place we live into 'organic farming soil'. This means aiming to become an 'Organic Town'. ◇ Through our sake brewing, we are working to make what children consume healthier and safer. This involves supplying organically grown rice and vegetables to children's school lunches. ◇We will transition to wooden barrels for brewing and wooden tools for fermentation. This means reducing iron and plastic, valuing materials that return to nature. While one company alone may seem inadequate, we believe protecting and nurturing primary industries (agriculture and forestry) is the beginning of a "return to Edo."
