- As the Man’yōshū poet Ōtomo no Tabito wrote, “The name of sake is ‘Hijiri’—the wisdom of the great sages of old,” the term “Hijiri” refers to exceptionally clear sake. We began brewing sake amidst the natural waters and lush, green surroundings of the southwestern foothills of Mount Akagi in Joshu, where fireflies dance, and have carried on this tradition and craftsmanship for eight generations spanning 180 years. Guided by the motto “Brewing sake that sparks the imagination,” we craft sake designed to make an immediate impact the moment it touches your lips. We aim to create sake that offers a distinct sensation of fresh carbonation alongside the rich umami, acidity, and sweetness of the rice—yet remains easy to drink and leaves you wanting more. We primarily use "Gohyakumangoku" and "Hitomebore" rice from Gunma Prefecture, and we also produce sake using the kimoto method with "Yamada Nishiki" from Hyogo Prefecture, "Watashu" from Shiga Prefecture, and "Omachi" from Okayama Prefecture.
