- In 1793, Koizumi Heizo, who had been granted permission to bear a surname and sword, established Koizumi Sake Brewery at this location at the foot of Mount Kano. Since then, the name was passed down through generations. Genzo, who inherited the family business in the early Meiji period, devoted himself even more to the enterprise, leading to significant growth. The earthen warehouse-style sake brewery that remains today serves as a testament to Genzo's achievements. In the early Showa period (1926-1989), the brewery owner, Issuke, installed refrigeration units within the brewery early on to rigorously control temperatures, striving to improve the quality of the sake. He lived at the testing facility while training in sake brewing, passionately dedicating himself to ginjo sake production, which was advanced for the surrounding region. This spirit of ginjo sake brewing has been passed down steadily ever since. Today, the brewery owner himself serves as the master brewer. In the environment along the Minatogawa River, blessed with clear air and cool water, he upholds the belief that "sake brewing begins with rice cultivation." Using rice he cultivates himself, brewing water sourced from the Kanoyama mountain range, and his masterful techniques, he strives to preserve the fine traditions of the past while looking toward a new era in sake brewing.
