Ozawa Shuzo was founded in 1702 in Sawai-mura, Bushu, on the road connecting Edo and Koshu. The sake's name "Sawanoi" is derived from the name of the village, Sawai-mura, which was named after the abundant water flowing as a stream. Sawanoi's philosophy is to combine the brewing water that wells up from the depths of caves excavated from the Chichibu Kosei layer, the mountains and lush greenery, the clear Okutama air, the best rice, and the finely honed techniques to create a single drop of beautiful sake, which is the result of the whole company's sincerity and diligent efforts. We aim to create sake that allows our customers to feel the breath of nature in Okutama when they drink it.
