- "Light and delicious" is how the brewery describes the quality of its "Sukajiwarizuru" sake. This is the taste that the brewery has built up as a united effort to produce as good a sake as possible. The brewery was founded in 1819. The area is a rice-producing region that produces high-quality rice suitable for sake brewing, such as Gohyakumangoku and Takamine Nishiki. The water that is said to affect the taste of sake comes from a limpid well on the premises, and is used for brewing and washing. This groundwater is subsoil water from the Miomotegawa River, known for its salmon runs, and is soft water with a fine sweetness. What has been passed down from generation to generation in this brewery is a sincere attitude toward sake brewing. Using high-quality rice and limpid water as raw materials, the toji (master brewer) and young brewers are working day after day to produce "good sake" that will please everyone.
