The important elements for brewing sake are "rice," "water," and "people. At Manotsuru, we have added "Sado" to these elements to create the phrase "Shiho Wa Brewing," which means brewing with the harmony of four treasures, and this has become our motto for sake brewing. The family crest of the brewery, "Yotsumame," is also a reference to this motto, and the brewery is always in pursuit of "well-balanced sake" that makes full use of all of the elements. Sado Island, where the Manotsuru brewery is located, is working to protect the natural environment and ecosystem in order to release the Toki herons. An island that is friendly to egrets is also friendly and safe to people. We grow "Koshitanrei" and "Gohyakumangoku" on this island under contract.
