Founded in 1890 (Meiji 23). It is located in a town at the foot of Mt. Kakudayama, about an hour's drive from the center of Niigata City. Nishigama-ku (formerly Maki-cho), where the brewery is located, is rich in nature, with the sea, mountains, rivers, rice fields, and historical sites where fireflies fly in summer. We named our sake "Tsurukame" (meaning "crane and turtle" in Japanese) in order to create a delicious sake that people can enjoy on special occasions throughout the four seasons, and to make the name easy to understand and a trademark of congratulations. Our most important point is "to deliver the best tasting sake to our customers. Echigo Tsurukame's sake is characterized by its umami and sour taste. Freshness is an important condition for this. We only heat-fire the sake once, and then store all the sake in bottles. By keeping the sake as fresh as possible, we are able to preserve it as close as possible to the time when it was squeezed, without aging it in the tank. In order to achieve the highest quality of sake that satisfies our customers, we insist on making small batches of sake. We select the right rice, wash the rice appropriately, and set the optimum water absorption conditions each time, and draw out the characteristics of the raw material rice by making full use of our expert skills.
