The Morohashi Sake Brewery is located in the Tochio Basin in the eastern part of Nagaoka City, between the Uonuma Hills and the Echigo Mountains. This is where Kenshin Uesugi spent his youth. The famous sake "Echino Kagetora" was created in honor of "Nagao Kagetora," which was Kenshin's name at the time. The slopes of the mountains have been carefully cultivated, and the terraced rice paddies are among the best in Japan. The terraced rice paddies produce high quality rice. The water is natural water drawn from a well on the company's property and spring water from the "Todonomori" spring, which has been selected as one of the 100 best waters in Japan. Both are used as brewing water, and both are ultra soft water with a hardness of 0.47. It is said to be difficult to ferment because it contains few impurities and is like distilled water, but it produces a dry sake with a gentle taste.
