- Founded in 1868. Our brewery is located in Minamiuonuma City, Niigata Prefecture, in a snow-covered region surrounded by the Echigo Sanmyaku Mountains and Mt. Makihata. Using rice milled in-house, meticulous processing of raw rice, and soft groundwater from the Mt. Makihata range, we brew a diverse range of sake based on the ginjo-style brewing method, guided by our philosophy of “Brewing Happiness.” In recent years, a young team of brewers, primarily in their 30s, has taken the lead in production, challenging themselves to create a wide range of sake styles—from dry to umami-rich, and even low-alcohol varieties. While preserving tradition, they incorporate new sensibilities to pursue sake that satisfies the hearts of those who drink it. We use rice varieties such as "Ippon-shime," "Takane-nishiki," and "Yamada-nishiki," all grown locally in Minamiuonuma. We continue to brew sake that complements meals and enriches everyday moments, while cherishing the delicate flavors born from the deep snow and abundant nature of the region.
