- As the name of the prefecture suggests, Niigata Prefecture is home to numerous lakes and marshes with the character “gata” in their names. Among them, Fukushima-gata in northern Niigata Prefecture is a beautiful waterside area where the majestic Gozu Mountain Range is reflected on the lake’s surface, preserving the quintessential Japanese landscape throughout the four seasons. Selected as one of “Japan’s 100 Natural Wonders,” it is a treasure trove of nature. It is not only home to swans but also Japan’s premier gathering spot for the Great Crested Grebe, a designated Natural Monument, and serves as a habitat nurturing a diverse array of flora and fauna. In 2021, we established a tiny sake brewery on the shores of Fukushima Lake. It is a rare brewery that obtained a new license specifically for craft sake and sake intended for export. Guided by the motto “Inspiring, Diverse Flavors,” we are dedicated to sake brewing while maintaining a commitment to “ultra-small-scale” production. Since the area surrounding the brewery is rich in agriculture, we use only rice grown within a 20-kilometer radius as our main ingredient, contributing to both ecology and the local economy. Since the brewery is located on the shores of a lagoon, it is named “LAGOON BREWERY.” Just as the lagoon nurtures biodiversity, our diverse sakes are nurtured here, ready to take flight—like migratory birds—across Japan and around the world. Inspired by this vision, we named our brand “Sho-ku.”
