Founded in 1848, the brewery has a long tradition and history, and has continued to produce high quality sake since its founding with its favorable climate, famous water flowing from the 3,000-meter mountains, traditional techniques, and uncompromising dedication. Junmai-shu Kaze-no-Bon," which has been on the market since 1981, is made from 100% organic rice Koshihikari, which is JAS-certified organic rice that does not use any agricultural chemicals or chemical fertilizers, and along with its mellow flavor, the company aims to improve quality in terms of safety and security. The company's motto is to produce sake that is soft on the palate with an emphasis on smooth flavor lines, and perhaps due to the soft brewing water, even the junmai sake is light on the palate and does not become boring to drink.
