- Kurumada Shuzo is a sake brewery located in Hakusan City, Ishikawa Prefecture, in the heart of the Kaga Plain, which stretches at the foot of Mount Hakusan, one of Japan's three most famous mountains. The brewery uses mineral-rich groundwater brought from Mt. Hakusan over a hundred years, locally grown Gohyakumangoku and Hyakumangoku No Shiro and Yamadanishiki grown in the highest district of Hyogo Prefecture, and brews with the Yamahai method, which sublimates "techniques" backed by 200 years of tradition. We brew with sincerity in pursuit of the supreme food sake of the Kanazawa cultural sphere. What we brew is not just an easy-to-drink sake. We brew sake that is not only easy to drink, but also has a true "umami" flavor that reflects the "culture" that lives and breathes in this region, while incorporating the sensibilities of the times without ever being trendy. Kurumada Brewery continues to challenge itself to create "high-quality, delicious sake" that is enjoyed by those who choose to drink it, and that those who handle it can recommend to their customers with confidence, creating a supreme moment with their food.
