- Shirafuji Brewery is located in Wajima, Okunoto, at the tip of the Noto Peninsula, which juts out into the Sea of Japan. Noto, the first region in Japan to be recognized as a World Heritage Site for agriculture, is a region with a rich food culture, customs, and traditional techniques. Wajima once prospered as a port of call for Kitamae-bune ships and as a harbor for their parents. The brewery was founded in the early 18th century as a shipping agent, and began brewing sake in the late Edo period (mid-19th century). Since 2006BY (Brewery Year), the 9th generation brewery owner and his wife, who studied brewing at university and sake brewing under Noto Touji, have been making high quality sake. The brewery was severely damaged by the Noto Peninsula Earthquake of March 2007, which had a seismic intensity of 6 on the Japanese scale, but was rebuilt in the same year, leaving only a small portion of the building. Although small, the brewery has a good work flow, and we have made a new start in a brewery made of local ate (hinoki cypress) and cedar wood. Despite its small production scale, the brewery has an established reputation for flavor, and in 2017 was selected by All Nippon Airways (ANA) to serve sake in first class on international flights.
