The Matsunami Brewery has been brewing sake since the first year of Meiji in Matsunami, Noto Town at the tip of the Noto Peninsula. Although 140 years old may seem young compared to other breweries that have been in business for 200 or 300 years, one step inside and you can feel the weight of the times. The brewery continues to use traditional sake brewing tools with great care and insists on cold brewing by hand. Thankfully, our well water, which has been clean and full of flavor for over 100 years, has never run dry and continues to support our brewing process. The sake we make ranges from ordinary sake that is enjoyed with a glass of wine every evening to daiginjo-shu that makes the occasion even more valuable.
