- Founded in 1804 (the first year of the Edo Bunka era), the brewery was established in Matsuoka, Eiheiji-machi, by its first founder, Ishidaya Nizaemon. Since then, guided by the philosophy of “crafting fine sake”—a principle passed down through generations of brewers—we have pursued a style of sake unique to Kokuryu. We are committed to using sake rice meticulously cultivated by dedicated farmers and high-quality water sourced from the sacred Hakusan mountain range, while preserving the tradition of sake brewing by hand. Furthermore, we have continuously explored new possibilities for sake and pioneered initiatives that have led the industry. We consider every detail, right down to the moment our customers “savor” our sake, and we continue to embrace innovation while preserving traditional techniques. In addition, with the 2022 opening of “ESHIKOTO”—a multi-purpose facility dedicated to conveying the culture of the Hokuriku region, including Fukui—we are not only “brewing sake” but also producing “spaces” where sake, food, and people connect.
