- Since our founding in Bunka 3 (1806), we have continued brewing sake in the richly flavorful town of Eiheiji. The name "Eiheiji Hakuryu" (Eiheiji White Dragon) originates from the early morning mist rising from the Kuzuryu River beside our brewery during the harshest winter mornings, which the people of that time likened to a white dragon ascending to the heavens. We are committed to local water, rice, and people. Specifically, for our sake rice, we use only rice cultivated entirely by our own company or contracted farmers. We live with rice throughout the year, from cultivation to brewing. Furthermore, we refer to the entire environment surrounding our brewery as "Eiheiji Terroir." This includes the pure, clear snowmelt water nourishing the local fields, the waves of golden rice ears, and the voices of the brewers echoing on snowy mornings. We aspire to capture all these elements of our village in every bottle. Since 2017, the brewery owner's second daughter (then 24 years old) has served as the head brewer. Though a small, family-run operation with 220 years of history, we continue to strive daily for the highest quality—from rice cultivation and brewing to delivery to our customers—guided by our motto: "Eyes that see, hands that reach, hearts that connect."
