Since our founding in Bunka 3 (1806), we have continued brewing sake in the richly flavorful town of Eiheiji. The name "Eiheiji Hakuryu" (Eiheiji White Dragon) originates from the early morning mist rising from the Kuzuryu River beside our brewery during the harshest winter mornings, which the people of that time likened to a white dragon ascending to the heavens. We are committed to local water, rice, and people. Specifically, for our sake rice, we use only rice cultivated entirely by our own company or contracted farmers. We live with rice throughout the year, from cultivation to brewing. Furthermore, we refer to the entire environment surrounding our brewery as "Eiheiji Terroir." This includes the pure, clear snowmelt water nourishing the local fields, the waves of golden rice ears, and the voices of the brewers echoing on snowy mornings. We aspire to capture all these elements of our village in every bottle. Since 2017, the brewery owner's second daughter (then 24 years old) has served as the head brewer. Though a small, family-run operation with 220 years of history, we continue to strive daily for the highest quality—from rice cultivation and brewing to delivery to our customers—guided by our motto: "Eyes that see, hands that reach, hearts that connect."

This is the closest restaurant to Yoshida Shuzo. We highly recommend their fresh Fukui seafood and carefully prepared grilled fish! Reservations are required for their handmade soba noodles. This restaurant offers the best of Fukui’s culinary scene, including their signature sauce katsu don. Since it’s always packed, we recommend making a reservation.

福井割烹 望月

Carefully prepared local specialties from Fukui are served one dish at a time. In the private "Izayoi" room, reserved for only one party, you can enjoy an even more elegant experience.

Ko Sushi

Not only the sushi, but every dish leading up to it—including the grilled items—is delicious. Please enjoy them with a glass of sake from Fukui.

With a wide variety of rooms and baths, the inn is perfect for any occasion. Depending on the season, they serve fresh, locally sourced vegetables and seafood from Fukui, as well as Wakasa beef, prepared using the cooking methods that bring out their best flavors. In addition to local Fukui sake, they also offer sake brewed by the innkeeper herself, who has been involved in both rice planting and sake brewing. The breakfast buffet is not only extensive but also incredibly popular for its carefully crafted flavors, with each dish prepared with great attention to detail.
