- The brewery is located in Hokuto City, Yamanashi Prefecture, surrounded by the rich nature of the Yatsugatake Mountains. The name Take-no-i comes from the name of Takezaemon I and the well from which the subterranean water of the Yatsugatake Mountains springs. The rice used for the brewing process is made from rice suitable for sake brewing imported from all over Japan, and the yeast required for fermentation is mainly flower yeast isolated from flowers at the Tokyo University of Agriculture. For the brewing water, we use subsoil water from the foot of Mt.
