- Founded in 1750 (Edo period, Kan'ei 3), Shichiken boasts nearly 300 years of history and has its brewery in the Hakushu area of Yamanashi Prefecture, renowned within the Japanese Alps for its exceptionally high-quality spring water. Guided by the philosophy of "sake that embodies the local Hakushu water," the brewery pursued a brewing method that harmonizes with Hakushu's water, establishing its signature ginjo-style unblended sake technique. The "Shichiken Junmai Daiginjo Ohnakaya," cultivated over its long history, was served at the official reception of the Davos Conference in Switzerland for four consecutive years starting in 2012. The inner parlor of the main house, where Emperor Meiji once stayed, is designated as a historic site by the Ministry of Education, Culture, Sports, Science and Technology. In 2015, the brewery focused on a new division dedicated to producing sparkling sake, working to create value for sake loved worldwide. Furthermore, in 2025, Shichiken Junmai Daiginjo Hakushin won the Champion Sake award at the globally renowned International Wine Challenge competition in London, achieving a first for Shichiken.
