- Founded in Meiji 33 (1900) in the picturesque land of Saku, Nagano Prefecture, this fine sake is brewed using underground water from the Chikuma River and premium sake rice primarily harvested within Nagano Prefecture and Saku City. Named "Kame no Umi" (Turtle Sea) from the auspicious phrase "Kameju Fukukai" (Turtle Longevity, Sea of Happiness). In the early Taisho era, the brewery pioneered the introduction of the newly developed rapid fermentation method. In the 1960s, it became a trailblazer in Nagano Prefecture by launching commercially available ginjo sake. This spirit of pursuing high-quality production, delivering fine sake contrary to mass production, continues to this day. Since 2000, the brewery has focused on brewing junmai sake primarily from locally grown rice. This rice is cultivated through reduced-pesticide farming methods, a collaborative effort involving local farmers, the brewery, and consumers, and is certified organic under the JAS standards.
