- Yamasan Brewery is a sake brewery founded in 1867 in Ueda, Nagano Prefecture. Long operating in this town known as the castle town of the Sanada clan, it temporarily ceased brewing amid changing times. In 2023, driven by a desire to carry the region's sake culture into the future, it resumed production. For brewing, we use sake rice nurtured by Shinshu's rich natural environment and pure underground water from the Dokko Mountain range. We prioritize maximizing the appeal of ingredients cultivated by the local terroir, practicing brewing deeply rooted in the community. Yamasan Shuzo's hallmark is meticulous brewing through small batches of 600kg per batch. Every step is done by hand. Through the delicate temperature control and meticulous process management unique to small-batch brewing, we draw out the individual character and umami of the sake rice. While cherishing tradition, we also embrace new sensibilities, pursuing premium sake that harmonizes with modern food culture. This is Yamasan Shuzo's approach to sake brewing. We continue to carefully craft each cup, born from the terroir of Shinshu Ueda.
