Mikotsuru was originally a sake brewery rooted in the climate and traditions of Suwa, Nagano Prefecture, founded in 1912. After over a century of operation, it closed its doors in 2017. However, the following year, under new ownership and management, it was revived. Following trial brewing and the reconstruction of the brewery, it is now entering its eighth brewing season in 2025BY. Mikotsuru's theme is 'Sake that makes your heart flutter'. Utilizing clear underground water and a cool climate, it pursues a sake that stirs the drinker's senses. The desired taste profile features a transparent mouthfeel, fresh fruit aromas, and an elegant finish that complements food. It prioritizes the harmony of flavors and the beauty of the aftertaste over flashiness. All rice is sourced through fixed-volume contracts with designated farmers and fields. From farmer selection to rice polishing ratio, koji production, mash management, pressing, pasteurization, and storage aging, we allow no compromise. We continuously refine quality by enhancing reproducibility and precision. Through small-batch brewing, we implement meticulous temperature control and hygiene management, establishing a system to deliver our sake in its optimal state. Honoring tradition while embracing innovation, we communicate the new value of Japanese sake from the land of Shinshu to the world.

地酒 炭火焼鳥 佳肴あり井

A yakitori izakaya located in front of JR Chuo Main Line's Shimosuwa Station. The owner meticulously grills yakitori over charcoal, and the lineup of carefully selected Shinshu sake—including the region's only local brewery, 'Gokotsuru'—is exceptionally well-stocked. Beyond yakitori, you can also thoroughly enjoy authentic Shinshu cuisine.

飛やじ

A hidden gem nestled down a narrow alley, housed in a renovated traditional Japanese home. Offering authentic Shinshu cuisine alongside an extensive selection of local sake. For dessert, we recommend the clay pot-cooked mixed rice. This popular spot is notoriously difficult to book.

Unatomi

Located in the heart of Nagano Prefecture, the Suwa Lake area has long been famous for its many eel restaurants. Among them, Unafuku has recently become particularly popular. Their thick, succulent eel, grilled to perfection, offers a deeply satisfying taste and generous portion. This popular spot inevitably draws long lines on weekends.

Banya

A popular spot in front of JR Chuo Main Line's Suwa Station. This restaurant specializes in Shinshu cuisine and local sake from Suwa, a renowned sake-producing region, offering a wide selection of Shinshu sake. Featuring semi-private booths, the bright interior buzzes with energy, making it a delightful place to enjoy delicious food and drinks.

蕎麦屋 みのり 秋宮前

A popular Shinshu soba restaurant renowned for its exceptional broth, crafted with the owner's meticulous care. Beyond soba, it offers a wide selection of appetizers to enjoy alongside local sake.

Tonneruya

A tranquil Shinshu soba restaurant with private tatami rooms. Popular for soba, tempura, and fried chicken. Boasts an extensive selection of local sake, making it irresistible for sake enthusiasts.

Gingetsu

Gin-getsu, a long-established inn in Shimonosuwa, flourished as the only post station along the Nakasendo's sixty-nine stages to feature hot springs, and as the junction where the Koshu Kaido and Nakasendo roads met. This inn, steeped in historical charm, is a mere 3-minute walk from Suwa Taisha's Shimosha Akimiya and a 15-minute walk to Harumiya.
