- Daishinshu Brewery was founded in 1880. As the name suggests, the brewery is located in Nagano Prefecture, Shinshu. The brewery uses melted snow water from the Northern Alps, which travels through the earth over a long period of time before reappearing on the surface. All of the sake rice used is contract-grown Hitogokochi and Kinmon-Nishiki, both of which are suitable for sake brewing in Nagano Prefecture, and we aim to produce genuine, locally produced sake. The sake we brew is a reflection of the natural environment surrounding the brewery itself, and is a "blessing in disguise" from the climate and natural features of the Shinshu region.
