- Founded in 1861. The sake name "Kinkazan" is derived from the name of the symbolic mountain of Gifu City. Hinode Tsuru" is named after the combination of "hinode" (sunrise) and "tsuru" (crane). The sake brewing process is done entirely by hand, from rice washing to rice malt preparation, with no reliance on machines.
