Founded in 1837 (the eighth year of the Tenpō era) during the late Edo period, the brewery is located near Ogaki Castle—where troops once set up camp during the Battle of Sekigahara—and prospered as the official supplier to the Ogaki Domain during the Bakumatsu period. More than 50 years ago, we were commissioned by officials from Shirakawa Village in Gifu Prefecture to produce a cloudy sake reminiscent of the sake served at the Shirakawa-go Doburoku Festival. Since then, “Shirakawa-go Junmai Nigori Sake” has been our flagship brand to this day. We are a brewery specializing in cloudy sake (nigori sake and doburoku), with these products accounting for 90% of our total production. Using a unique brewing method distinct from other breweries, we craft nigori sake that is exceptionally rich and packed with the umami of rice. In addition to our standard nigori sake, we offer lightly cloudy varieties, the clear supernatant of nigori sake, frozen and chilled unpasteurized sake, sparkling nigori sake, and authentic doburoku—a long-cherished dream finally realized. It is this unwavering dedication to nigori sake that underpins the Shirakawa-go brand. However, this dedication to nigori and doburoku can only be sustained and further developed through our expertise in clear sake. Although our production volume is small, our passion for brewing clear sake remains undiminished. Every January, we begin brewing a range of sakes, from Daiginjo to Honjozo. The brands of these sakes include “Dosan Ginyukka,” “Tetsushin,” and “Kessen Sekigahara.” While most of these are distributed primarily locally and remain largely unknown, their quality is such that we are proud to present them anywhere. Together with our cloudy sakes, they continue to evolve to even higher levels of excellence.
