- Founded in 1772. We are an "udatsu-lined" sake brewery in Mino that uses Nagara River subsoil water for brewing. The subsoil water of the clear Nagara River that flows nearby is pumped from a well and used for washing rice, steaming rice, and brewing water. The water, which comes out through the fertile soil, is rich in organic minerals. Thanks to this, koji mold and yeast grow vigorously. This gives "Hyakushun" a very strong aroma and deep flavor. The harmony created by water, the skill of the master brewer, and carefully selected sake rice. We hope you will enjoy it. The main building of the brewery, built in the "udatsu-zukuri" style when the brewery was founded, has been designated as an important cultural property of Japan.
