- Since its establishment in 1702 (Genroku 15), Shiaroku and Kozaemon have passed down the techniques that have been handed down for over 300 years in the beautiful country of Mizuho. The water is soft, mineral-rich, and characteristic in quality. Sake brewing takes advantage of the characteristics of both the blessed water and the rice. With the theme of making a "food sake" that can be matched with a variety of foods, we are challenging ourselves to create a wide range of flavors, such as fragrant, umami, sharp, mature, and kijo sake. Please enjoy the mellow taste, richness, and sharpness created by the magnificent nature.
