Hirata Brewery has its roots in the Edo period. Its predecessor was a merchant family that operated a pomatum oil and candle shop in the center of Hida Takayama. In the Meiji era (1868-1912), the fifth generation founded the brewery. Since then, the brewery has continued to study and produce sake under the motto, "Sake is brewed and nurtured," sometimes harshly, sometimes gently, and with love. What is important for sake? We believe that it is the local climate, the local weather, and the local people. Sake is created by the hands of brewers, but the rice, water, and fermentation are the blessings of the land from year to year, so to speak. Sake is the "harmony" of these elements. The current Hirata Sake Brewery has its roots in Ise and Hida. We brew our sake with local domestic rice such as "Isehikari" and "Hidahomare" and groundwater from the clear Miyagawa River. The history of the beautiful country of Ise, the advantage of the cold Hida region, and the techniques cultivated through tradition. That is the Hirata Sake Brewery.
