In 1912, Kinzo Mochizuki and his son Yoshimatsu, who were engaged in forestry and sericulture in the mountains north of where the brewery is now located, founded a sake brewery out of their passion for sake. In order to start sake brewing, they searched for water suitable for sake and set up a brewery near the Kanzawa River. After much study, they named their sake "Shosetsu" in honor of Yui Shosetsu, a local military strategist who lived honestly even in defiance of the times. For a century since then, we have been striving to create a sake with five tastes (sweet, spicy, bitter, astringent, and acidic) in harmony with an elegant and refreshing aroma, so that sake can be enjoyed with a cup of sake without getting tired of drinking it.
