No matter how excellent the rice and water are, without the diligence of the people who process them, it is impossible to bring out the true flavor of the rice and water and create a truly delicious sake. Our sake brewing is based on "uncompromising craftsmanship. Using carefully selected brown rice for brewing and high-quality underground water from the Mikane Mountains as the main raw materials, we apply our unique know-how to all processes, from rice polishing to mash, storage, and even bottling. We carefully control the quality of each step of the process in our pursuit of authentic sake flavor.
