- Founded in 1862, at the end of the Edo period (1603-1868), the company has been brewing "Mie-no-shintame," a sacred sake dedicated to the Ise Jingu Shrine and more than 800 other shrines in the prefecture, for about 80 years from 1933 to 2011 using traditional wooden vat brewing methods. We use this traditional technique to brew traditional sake using subterranean water from the Suzuka mountain range and carefully selected rice suitable for sake brewing. We are making efforts to improve the quality level of the brewery as a whole by doing what we can only do as a small brewery: washing all the ingredients by hand according to the process used for daiginjo-style brewing, processing the ingredients by limited water absorption, and making the same 3 cm ultra thin koji for the regular class products. Tianyurin" aims to be a food sake that enhances the flavor of food. The brand name is derived from a book by the ancient Chinese thinker "Zhuangzi," in which "Tianyu" means "a free state of mind as if one's heart is playing in the sky," and "Rin" means "a beautiful jade. We want to make sake that not only tastes great freshly squeezed, but also matures over time, and when warmed up further, the original flavor of the rice increases and complements the flavor of the food. The brewery staff and I will continue to brew with all our hearts in the hope that our customers can enjoy a relaxing time with our sake.
