- Suzuka City in Mie Prefecture, where our brewery is located, has long been known as “Umasake Suzuka-no-Kuni” (the Land of Fine Sake) because it has traditionally been a region renowned for producing excellent sake. In a passage from an ancient text titled *Yamatohime-no-Mikoto no Seiki*—which describes the imperial procession of Princess Yamatohime as she searched for a place to establish a shrine at the behest of the Great Sun Goddess Amaterasu, eventually settling on the present-day Ise—there is a record stating that when she visited Suzuka and asked a local for the name of the place, the person replied, “It is Umasake Suzuka-no-Kuni.” Even in the modern dictionary *Daijirin* (published by Sanseido), looking up “Umamasake” yields the entry: “Land of fine sake” and “A枕詞 (kakekotoba) associated with Suzuka, derived from its fame as a sake-producing region.” This suggests that since ancient times, Suzuka has been widely recognized as a land of fine sake. With the aspiration “Better sake than yesterday” in our hearts, we dedicate ourselves to the daily craft of sake brewing. Suzuka, once the site of the provincial capital of Ise Province, is a historic place where many people passed through on their pilgrimage to Ise Grand Shrine. Nestled between mountains and the sea, Suzuka is blessed with pure, abundant water and has long been known as a region producing delicious rice. In this blessed environment, our master brewers and brewery staff dedicate themselves to crafting sake with unwavering sincerity every day. Even within the seemingly repetitive tasks, there are subtle refinements and accumulated efforts; each step leads to sake that is “better than yesterday’s.” We understand that it is our destiny as brewers in this region to quietly craft delicious sake worthy of the “Sake of Suzuka” tradition passed down through history. With this in mind, we strive daily to refine our craft and brew “modern-day sake.”
