- Founded in the fourth year of the Ansei era (1857 AD) Since we produce miso and soy sauce in addition to sake, we use the term “brewery” rather than “sake brewery.” We brew sake based on the belief that delicious sake is born from good rice, good water, and the brewery’s philosophy. In addition to Mie Prefecture’s “Gohyakumangoku” variety, we primarily use 100% domestically grown rice specifically suited for sake brewing. Furthermore, we use “Yuminariho”—a sake rice variety exclusive to our brewery—to brew “Shiki,” a sake representing the Ise region. “Yuminariho” is a sake rice variety developed by the Faculty of Biological Resources at Mie University. It is cultivated through a collaborative effort uniting the university, the local community, agricultural cooperatives, and our brewery—a true regional partnership. With the brewery and the brewers working as one, we are committed to the art of handcrafted sake. We aim to create sake that evokes ripples on water—a harmonious, joyful gathering where everyone comes together in a circle—and we are dedicated to passing on the traditional “culture of flavor.”
