- Kiyashō Shuzō was founded in 1818 along the Hatsuse Kaidō, the road connecting Nara and Kyoto to Ise Jingu. It is said that the family’s ancestors moved from Imabari to serve the Tōdō clan in the early Edo period. The company name “Kiyashō” derives from the family’s former trade as lumber merchants. The Iga Basin lies at an elevation of 200 meters in the center of the Kii Peninsula. With stable rainfall and significant temperature differences between morning and evening, the region has long been renowned as a premier rice-growing area. Located at the uppermost reaches of the Kizu River system—which flows into the Yodo River—the underground waters of the Nabari River are exceptionally pure, providing an ideal source for brewing. It was in this environment that the sixth-generation head, Yukikatsu Onishi, returned to the brewery and, in 2004, named the sake he personally brewed as "Jikon." “Jikon” is a term derived from a Zen Buddhist story, meaning “to live the present to the fullest, unburdened by the past or the future.” We have adopted this word as our brewing philosophy. We aspire to be a brewery that continues to evolve while marking the passage of time in the present. In January 2026, we began operations at our new Kiyama Shuzo Kajimachi Brewery. This facility handles shipping, rice washing, and sake storage.
