- The Iga Basin is said to have once been the bottom of Lake Biwa. With its fertile soil, climate characterized by significant temperature fluctuations, the crisp air of the Aoyama Highlands, water purified by mountain streams, and high-quality sake rice grown in Mie Prefecture, this region is blessed with the abundant natural resources essential for sake brewing. It was here that Shigetō Gizaemon began brewing sake in 1853 (the 6th year of the Kaei era). Our lineup includes our flagship brand “Wakabebisu,” “Gizaemon” named after our founder, and “Shinshu,” a Yamahai-style sake made by carefully nurturing the starter culture over time and with great care. Additionally, we offer a diverse range of series, such as “Wakabebisu Plus,” which is sure to bring a smile to your face with just one sip! Our sake brewing, which blends “tradition and innovation,” has earned high acclaim. To preserve the traditions passed down through 170 years of generations and pass them on to the future, in the summer of 2024, we undertook a major renovation of the brewery. At the same time, we reviewed every process and product—from sourcing raw materials to shipping finished goods—and transformed the facility into a state-of-the-art brewery equipped with the latest climate control systems. Under strict temperature control, we’ve made it possible to maintain a fresh rotation through small-batch brewing. We express innovative and exciting flavors through unique combinations of yeasts, centered on Mie Prefecture yeast. With the motto “Excitement Starts with Wakajō!!,” Wakajō Shuzo continues to embrace new challenges while remaining a constant presence at the daily dinner table. Its flavors, imbued with the spirit of Iga’s terroir and the passion of its brewers, will continue to bring smiles and joy to people everywhere. Cheers to smiles!! Wakajō
