- Mifuku" is brewed in Koka, Shiga Prefecture, in the Land of Omi, using the "Yamahai method" to brew rich, full-flavored sake, and "Sanrensei" is a Junmai Ginjyo standard sake that is fresh and easy to drink. By using high quality rice grown in a rich natural environment surrounded by mountains and using subsoil water from the river that flows from the mountains into Lake Biwa, we are able to create a gentle and full flavor on the palate, which is then combined with the "Yamahai brewing" technique that has been passed down from generation to generation and new techniques and equipment to brew "Ginjo". The "Ginjo-shu" is brewed with new techniques and equipment. In order to bring out the best of each type of sake, they are brewed under different brands.
