Joyo Sake Brewery is located in Joyo City, Kyoto Prefecture, 5 ri from Kyoto and 5 ri from Nara. The company was founded in 1895 when the Shimamoto Sake Brewing Department was organized and the present brewery was newly built in this nature-rich area blessed with a mild climate and the subsoil water (soft water) of the Kizugawa River. Later, in 1973, Joyo Sake Brewing Co. We have been brewing sake with the techniques inherited since its foundation as the only sake brewery in the Yamashiro area in the southern part of Kyoto Prefecture, and with new attempts to meet new challenges every year. We aim to be a sake brewery that is rooted in the local community and loved by all, and we put our heart and soul into each and every bottle. In 1993, the brewery began producing a plum wine using "Jyoshu Hakubai," a variety produced in the local Aoya Plum Grove. The plums are large and have a peachy aroma, and they are pickled and stored for more than three years, making this long-aged plum wine a popular local product.
