Hakurei Sake Brewery, a traditional sake brewery dating back to Tempo 3, has been brewing sake in harmony with rice, water, and people under the slogan of "Innovation from the past. The brewery works with local farmers to produce the best rice possible, and uses water from Fudo Falls, a waterfall that flows out of the middle of Yuragatake, a mountain range in the Oe Mountain Range. The water is of super soft water quality, but can be used to brew both sweet and dry sake, which is the starting point of Hakurei's sake brewing. Sake brewed with carefully selected ingredients is made by hand by brewers using traditional brewing methods. We continue to carry on the brewing methods that have been handed down since the company's founding.
