- Kinoshita Sake Brewery was founded in 1842 in Kumihama-cho, Kyotango City, Kyoto Prefecture. Its representative brand, "Tamagawa," was named after the clear waters of the Kawakamitani River that flows next to the brewery. The brewery considers freshly squeezed sake to be the starting point, and seeks to create sake with an "interesting change" in flavor that deepens with the passage of time. The brewery pursues "sake with interesting changes" that deepens in flavor over time. Many products are shipped after aging, The flavor changes with the maturing environment and temperature, which is an attractive feature. Natural brewing In the current sake brewing process, the addition of pure yeast and lactic acid is the mainstream. Our company's sake brewing process uses no additives other than rice, rice malt, and water. The power of the microorganisms living in the clay walls and beams produces the one and only sake. We call this process "natural brewing.
