Matsuyama Shuzo was founded in 1923 (Taisho 12). The company had been brewing sake in Fushimi, Kyoto, since 1967 (Showa 42), but suspended production during the 2021 brewing season. While exploring its future direction, the company decided to resume sake brewing in a historic brewery built during the Meiji period. The site of the brewery is believed to have once been the Fushimi residence of the Satsuma Shimazu clan during the Edo period. It is a place steeped in history, where Princess Atsuhime of Tenjōin stayed during her time in Kyoto, and where Sakamoto Ryōma fled after being attacked at Teradaya. A new chapter in sake brewing begins at this site, which has witnessed so many events. Matsuyama Shuzo is a place steeped in both personal sentiment and history. Precisely because it is such a brewery, new challenges are essential. Sake is not made by people, but by koji mold and yeast. While discovering what makes “Jukoku” unique, we will continue to pursue the art of brewing even better sake.
