Our company is located in Yamazaki Town, Shiso City, Hyogo Prefecture, an old castle town on the banks of the Ibo River, where high-sided boats once transported rice and lumber. We were founded approximately 180 years ago, in the 8th year of the Tenpo era (1837) during the Edo period. Furthermore, historical records in the "Harima Fudoki," a chronicle of Banshu, document that the deity Iiwa no Okami first brewed sake in this very place. Today, the seventh-generation head of our family preserves the brewery's heritage while undertaking new challenges to pass it on to the next generation. Hiroshima Ichikkon focuses on pursuing a sake quality that perfectly complements food. We prioritize a subtle yet transparent aroma that doesn't overpower, along with a soft mouthfeel and a clean finish where the aftertaste fades beautifully. The Banshu region where our company is located is one of Japan's premier rice-growing areas, producing the renowned sake rice "Yamada Nishiki." Blessed with high-quality rice, we insist on using "Hyogo Prefecture-grown rice." Our brewing water is the soft, underground spring water from Hyogo's highest peak, Mt. Hyōno. Using these premium ingredients, our president and master brewer, inheritor of the traditional techniques of the Tajima brewers, crafts the sake. We meticulously control water absorption during soaking, use small batches in our fermentation tanks, and spare no effort or expense. Each bottle of the resulting sake is carefully bottled, pasteurized, and stored in refrigerators set to approximately 0°C. Furthermore, we utilize the abandoned Akenobe Mine in the Tajima region for extended aging within the mine tunnels. We aim for sake brewing that preserves tradition while seeking the next step forward. Our home, Shiso City in Hyogo Prefecture, is over 90% mountainous forest land, home to more than half of the prefecture's mountains exceeding 1,000 meters. It also boasts the Ibo River and Chigusa River, representative clear streams of the prefecture. Their headwaters flow out from Shiso. Numerous waterfalls, large and small, dot the streams throughout the area, including the renowned Harafudotaki Falls, selected as one of Japan's Top 100 Waterfalls. In summer, we have ayu sweetfish, which has even won the Grand Prix at the National Ayu Tasting Competition. In winter, we offer peony hot pot made with wild boar meat.

It opened in the castle town of the Yamazaki Domain, where sake brewing has flourished since the Edo period. It is a 3-minute walk from Sanyo-hai Brewery. The property has been renovated while preserving as much of the original architecture as possible. Guests can experience the building’s history firsthand through the artisans’ decorative carvings and massive beams, and the calm atmosphere is enhanced by sofas, lighting, and accessories carefully selected to complement the historic building’s charm.

Machiya Hotel Hekiun

Surrounded by rows of sake breweries nearby, the inn retains the rich atmosphere of that era while being infused with a modern spirit, reborn as “Kikutei: The Brewing Inn.” The word “Kamosu” in “The Brewing Inn” refers to the concept of viewing the time spent here as a time for “brewing”—a concept that aligns with the process of brewing sake that we undertake every day.
