- The Sawada Sake Brewery is located at the western edge of the Nara Basin. Miwa, which enshrines the god of sake, to the east, and Mt. Sawada Sake Brewery, a sake brewery founded in 1830, began full-scale sake brewing at the beginning of the Meiji era (1868-1912) during the reign of Sadajuro Sawada III. At that time, sake was brewed using rice harvested from the brewery's own rice fields and water from the Kongo and Katsuragi mountain ranges, which was highly praised as sacred water for health, and Yamato's local sake "To-meikan" was born. Sadashi Sawada, the fourth generation, was a brewing scientist who studied brewing at the Osaka Higher Technical School of Brewing (now Osaka University), which greatly improved the quality of sake. He greatly improved the quality of sake, making it one of Nara's most famous sake breweries. Sadako Sawada V graduated from the Tokyo School of Music (now the Faculty of Music at Tokyo University of the Arts) and became a prima donna of the Kansai Opera and a vocalist teaching at the Takarazuka Music School. Sawada Shuzo's sake is an excellent sake that inherits the good tradition of Nara's sake, and its refreshing yet full-bodied flavor reminds us of the elegance and grace of Nara's capital city.
