- Heiwa Shuzo was founded in 1928 by Tamotsu Yamamoto. Originally from Taniguchi Shuzo, a sake brewery dating back to the Edo period, Tamotsu inherited the headship of the Yamamoto family, which had been a Buddhist temple. Driven by his innate love of sake, he founded the brewery at that time. Our brewery has faced the threat of closure several times over the years. During World War II, as the war intensified, the government ordered us to suspend production. Even after the war, we were denied permission to resume our brewing license. Yasumasa, the second-generation owner, traveled to the National Diet to deliver a petition speech demanding the reopening of the suspended brewery. He passionately expressed the frustration of being forced to shut down and his hope to brew sake in the peaceful postwar era. His fervor finally secured permission to restart operations. This aspiration to "brew sake in a peaceful era" became the origin of the name "Heiwa Shuzo" (Peace Brewery). Unfortunately, rebuilding a once-closed brewery independently proved difficult. Until the late 1980s, they operated as a contract brewery for major Kyoto producers, selling their own brand only in small quantities. However, driven by the desire to brew what they truly wanted, they began shifting their focus to direct sales. In recent years, young master brewers and brewery staff have gathered, pioneering new approaches to sake brewing. Today, at Heiwa Shuzo, young brewers averaging 30 years old and passionate about sake tackle their craft daily with fervor, driven by the desire to "convey the appeal of Japanese sake" and "share the terroir of Wakayama." Their brewing, highlighting the clean, gentle taste of Wakayama's water, produces easy-drinking sake. This has opened the world of sake to those unfamiliar with it, especially younger generations. Through crafting sake like "Kido," liqueur "Tsuruume," and craft beer "Heiwa Craft," we aim to share the traditions and culture of "Wakayama" and "Japan" with the world. We strive to create warm, approachable sake and brewing practices that shatter the image of the taciturn, artisan-like "sake brewery," making the faces of the makers themselves come to mind. Furthermore, by cultivating Yamada Nishiki rice, plums, and yuzu citrus in our own fields and orchards, we foster connections with local communities and customers, nurturing a passion for craftsmanship and the unique terroir of Wakayama. Our philosophy is to deliver sake crafted with an unwavering commitment to high quality, thereby establishing the culture of sake not only in Japan but worldwide. That is the core principle of Heiwa Shuzo.
