Founded in 1896. Sake has been handmade by the Izumo toji, a sake brewer, for generations. In 1990, Izumo Jiden Sake, which is only available in the Izumo region, was revived for the first time in 50 years, and the company aims to brew sake that can play a role in the local food culture centering on Matsue. The name "Toyo-no-Aki" was chosen to pray for a bountiful harvest of not only the rice used to make the sake, but also of the five grains, and for the sake to be brewed in a rich and mellow manner. Under the motto of "plump, delicious, and comfortable," all ingredients are home-polished from rice suitable for sake brewing, mainly from Shimane Prefecture, and we aim to brew sake with the warmth of wood and hands, using wooden tools and the handiwork of the brewers.
