Accumulation of innovation becomes tradition Yoshida Sake Brewery will continue to constantly pursue even more "delicious sake" through new attempts every year. By using ultra-soft brewing water, designated as one of the 100 best waters in Shimane, and high-quality rice grown by local contract farmers, we brew fresh, aromatic, and crisp sake. Sake is delicious. We aim to be a "gateway to success" for those who are not familiar with sake, so that they can enjoy it without having to think too hard. We brew our sake using ultra-soft water with a hardness of 0.3, which can be said to be the "softest brewing water in Japan. This water comes from a well restored from the famous "Ochanomizu Well," which was a favorite of successive lords of the Hirose domain and was said to be the best water in the "Fumi-ryu Tea Ceremony. Although it is considered extremely difficult to use soft water for sake brewing, we believe that soft water is gentle water that is easy on the body for the drinker. Furthermore, soft water brings out the aroma and flavor of the sake well, making it easier for the drinker to appreciate the gorgeous aroma and the original flavor of the rice. For the brewer, it is difficult water to handle, but for the drinker, it has a soft and gentle taste that blends well with the body, and can be enjoyed even with new sake.
